I'm very new to Ultimate Edition and I can't figure out how to remove an application from the panel. i'm using gnome classic.

You need to be more specific about the task you want to do. Which application? A screeenshot is more than welcome.

I believe the hot key is Alt or Ctrl. Try holding down one of these and right clicking. It should bring up a small menu to be able to add or remove pannel applets...

Hold down the windows and alt key and right click. than youll be all set.
