To change the color go to Places > Home folder then press Ctrl+h or click on View > Show hidden files
Then click on .conkyrc and Display. In the file you will find the line
default_color e6df7e
That is the color code for conky which you can change to whatever color you want.
To get the color code for a color go to System > Preferences > Appearance > Background.
At the bottom of the window you will see "Style" and "Colors" then 2 boxes. Click on either one of the boxes to open the pick a color window.
You can play around with it to find a color you like which will be displayed in the right side of the box below the dial, and the color code will be in the Color name box. Once you pick a color copy the color name without the # sign and paste it into the .conkyrc file replacing the code that is already there like this

e6df7eThe new conky color (bright red)

FF2517(upper or lower case letters, it doesn't matter in this file)
Click the Cancel button in the Pick a color window (otherwise you'll make a color change to your desktops background).
Save and close the .conkyrc file.
To make the change to conky take effect without rebooting open a terminal and run these one at a time (no sudo needed).

There are a lot of things that can be done with conky but I'm not sure about adding the graphics cards info. to it.
