I am not sure how to bring up a list of Services or Processes so that I can select which ones to run at Startup and which ones to prevent from running at Startup.

I found a process, using System Monitor, called polkit-gnome-authentication-agent-1. If this is a process that I need to prevent from running at Startup, how do I do that?

In Ubuntu 9.10 the System Menu no longer contains Sessions or Services Menus.

buschbarber go to "System -->Administration --> Boot-up Manager" you will find all your services ect there!!

Just for your reference buschbarber, 'Sessions' has been renamed to 'Startup Applications' found in System>Preferences. However, services you will find as per DarkChilds reply.

I come from a Windows backround where MSConfig lets me enable or disable Startup items such as processes and services.

I see that the things you mentioned give me similar capabilities in from a GUI standpoint. I am a ways from being a Command Line guy but I am slowly moving in that direction.

Is the policykit authentication agent an important part of Ubuntu Security?

The Authentication boxes I see when I Restart look similar to the ones on the following link:

Yep "policykit authentication agent" is very important. I will suggest that you just forget about the password prompt that you get on startup or just wait until Ultimate Edition 2.5 is released to see how things play out!!
